Drew and I sat down one day this week and made a list of some things we want to accomplish this summer. Some things on the list are jobs we want to get done. Some are fun things we want to do. Some are just some new things we want to try. We might do some of the things more than once, but they are all things we definitely want to do. I thought I would share our list today, and then periodically this summer, I will blog about what we've accomplished from our list.

This week, we actually already accomplished #6 - make a strawberry pie!
I used my mom's recipe. It is the strawberry pie recipe that she made every summer when I was growing up, and it is a family favorite! It has a crumbly cookie crust and a delicious filling! Here's how to make it:
Strawberry Pie
Crust:
1/2 cup butter (1 stick)
2 tablespoons sugar
1 cup plus 2 tablespoons flour
In the bowl of a mixer, combine butter, sugar, and flour. Mix to combine into dough. Press dough into sides and bottom of a 9" pie pan. Bake at 375 degrees for 12-14 minutes. Set aside to cool.
Filling:
1 cup sugar
pinch salt
1/4 cup cornstarch
1 cup cold water
2 tablespoons dry strawberry gelatin
1 quart strawberries, washed, hulled, and sliced
Mix sugar, salt, and cornstarch in a saucepan. Add cold water. Bring to a boil and allow to boil a full minute, stirring constantly. Remove from heat and add gelatin. Stir for another minute to completely dissolve the gelatin. Pour over prepared strawberries, and refrigerate for two hours to thicken. Pour the thickened filling into the cooled crust. Chill for several hours or overnight before serving. Serve with Cool Whip on top. Enjoy!
